Dr. Romeo Rojas is a professor at the School of Agronomy, Autonomous University of Nuevo León, Mexico, and former Coordinator of the Research Center for Food Industries (2016-2022). His research interests include food, biotechnology, and agricultural sciences. Dr. Rojas has published over 45 research papers and 25 book chapters, and he has participated in over 80 scientific meetings. He is involved in projects funded by the Agricultural Secretariat of Mexico, the National Forestry Commission, and the National Mexican Research Council. He is a member of the SMBB (Mexican Society of Biotechnology and Bioengineering) and a Level II Researcher at SNI (Sistema Nacional de Investigadores). Dr. Rojas has supervised one doctorate, two master’s, and four bachelor’s theses. He has completed academic research in Portugal at the University of Minho and in Querétaro, Mexico at the National Autonomous University of Mexico.
