María de Jesús Perea Flores is currently a titular professor-specialist at the Centro de Nanociencias y Micro y Nanotecnologías del Instituto Politécnico Nacional (IPN) in Mexico City. She has a bachelor’s degree in Food Engineering at the Universidad Autonoma Metropolitana, and a PhD in Food Science at the IPN, Mexico. She is specialist in confocal-multiphoton microscopy and sample preparation to photonic and electron microscopy. These techniques have allowed her to understand the effect of thermal processes on the macro and microstructure of various plant tissue, and the integral use of agro-industrial waste. She has been author of more than 35 research papers in Indexed journals and has more than 5 chapters of book, as well as co-director of undergraduate and postgraduate thesis.
