Brenda Hildeliza Camacho Díaz is Professor and Researcher from Centro de Desarrollo de Productos Bióticos del Instituto Politécnico Nacional (CEPROBI-IPN) since 2010. Expert in functional foods, food engineering, microscopy, morphometry, image analysis and fractal geometry. She has worked as a lecturer in the Department of Food Engineering of ENCB-IPN. and currently, in the Laboratory of Microscopy and Imaging imparting the subjects of Engineering, Biochemistry and Microscopy. She has directed six undergraduate theses and fifteen master's and doctoral theses on topics such as: Agave fructans as a prebiotic and functional food ingredient in In-vitro and In-vivo models; encapsulation, Organosolv extraction, microstructure in the distribution of flows; morphology and analysis of biological sample imaging in photonic, electronic, and confocal laser sweep microscopy. In addition, she had participated in research projects funded by national and international organizations and institutions such as: MAPFRE, CONACyT and SIP. She has published in indexed journals and is co-author in two Mexican patents. In addition, she has been a reviewer of scholarships abroad, international journals, innovation and development projects in CONACYT calls.
