Dr. Anaberta Cardador-Martínez is a research professor at Tecnologico de Monterrey since 2007. Her research projects are focused on the identification and use of compounds from crops and food by-products to develop nutraceuticals products. Also, to study biological activities of such compounds, for instance antioxidant, antihypertensive, hypocholesterolemic, antimicrobial and anti-inflammatory. Her expertise is centered in Bioprocesses, Functional foods and nutraceutical, and food toxicology.
